步驟
1用調料壺裡加滿水,在白面里加一點鹽,一點一點的加水,用筷子先攪成絮狀,再揉到一起

2一直揉到表面光滑,最後靜置醒半小時

3韭菜洗凈切成末,木耳泡發洗凈剁碎

4肉餡加入雞蛋、鹽、生抽、切好的蔥末、薑末、料酒、香油,加入晾涼的花椒水(花椒水是用小半碗熱水將大約10粒花椒泡5分鐘,出花椒香味,撈出花椒,用花椒水拌餡兒)、按一個方向先慢後快的拌勻,花椒水可以分兩次加入

5肉餡兒攪拌好後,加入韭菜、木耳、鮮貝

6稍稍攪拌均勻即可,不用使勁拌,要不韭菜就該爛了不香了

13將蒸鍋上倒上少許油,(最近特別稀罕用油壺,覺得乾淨到油也有譜,不至於一下到多了,還好清洗)

14包好的餃子碼放在蒸鍋上

15放入鍋中,將水倒入鍋中,水量一定要到蒸籠底部標註的警戒線,千萬不能太少

16蓋上蓋,開火,開鍋後蒸10分鐘即可關火

17關火後先別開蓋,讓蒸餃在鍋里稍微燜一會兒
