食用梘水: 80g, 轉化糖漿: 280g, 花生油: 110g, 中筋麵粉: 500g

1選用新鮮的花生油,我這個配方大概做43個50g的月餅!餅皮20g,餡料30g!因為我是新手怕不好收口

2轉化糖漿和梘水混合均勻後加入花生油混合均勻,然後倒入中筋麵粉攪拌均勻,蓋上保鮮膜鬆弛1-2小時!

3蛋黃噴上白酒去腥然後在烤箱裡烤大約5分鐘,200度溫度

4捏好搓圓的蛋黃蓮蓉,30g每個

5餅皮搓圓壓扁,然後包入蛋黃白蓮蓉,在手的虎口慢慢推上去收口

9放入烤箱200度烤5分鐘刷一點蛋液,最好用毛刷!然後180度溫度烤20分鐘後取出!然後用廚房紙巾吸油晾過夜再包裝,好漂亮!

鬆弛時間不能超過2小時!新手收口比較複雜
