麻醬燒餅,在天津上大學時,最愛買這種燒餅吃,表皮酥脆,帶有芝麻醬和椒鹽的鮮香,剛出爐的香氣四溢,咬一口掉一地渣。如今再想吃到它比較周折了,堂媽在家裡研究了一下還原了老味道,咬一口麻醬燒餅,也勾起了在天津那些年的記憶……
原料
普通麵粉 400g, 芝麻醬 100g, 食鹽 3g, 溫水 適量, 酵母 5g, 花椒鹽 10g, 植物油(或者香油) 10—15g, 蜂蜜 少許, 芝麻 100g

2溫水將酵母粉化開,倒在麵粉攪拌均勻

3再倒入適量溫水,麵粉結塊後改用手揉勻(麵糰的軟硬根據自己喜歡燒餅的口感,酥軟的就讓生麵糰柔軟一些,喜歡焦脆的就讓生麵糰硬一些)

4麵糰揉的均勻光滑

5然後蓋上濕布或者鍋蓋放在溫暖的地方發酵20分鐘
