A:: , 低筋粉: 150克, 黃油: 50克, 全蛋液: 58克, 糖粉: 20克, B:: , 蘋果: 300克, 鹽: 1克, 黃油: 8克, 玉米澱粉: 5克, 全蛋液: 適量
步驟
1黃油軟化後倒入低筋粉和糖粉,用手不斷的揉搓,搓成粗顆粒狀;在搓勻的麵粉里加入全蛋液,揉成麵糰,稍微揉一下就可以,不需要揉光滑的,把麵糰放入冰箱冷藏半小時;

2開始製作蘋果餡料,把蘋果去皮去核切成小塊,果肉300克;

3煎鍋中放入8克黃油,黃油融化後倒入蘋果塊,稍微翻炒一下;

4倒入細砂糖和鹽;

5加入細砂糖後悔滲出很多水分,用中火慢慢煮干水分;

6玉米澱粉加適量水攪勻,倒入鍋中快速翻炒均勻;

7出鍋後攪碎,放涼備用;

8.面板上撒一層麵粉,將鬆弛好的派皮分成2:1 ,分別是160克:80克;

9把大的那份擀成比派盤大一圈的圓形;

10把擀好的派皮鋪到派盤上面,用手指輕壓派皮,使派皮緊貼派盤,然後用擀麵杖在派盤上壓一下,將多餘的派皮切斷;

11用叉子在派皮底部均勻的扎出小孔;

12將預留的小粉派皮擀成薄片,用刀切成約1cm的長條,派盤內填入蘋果餡料,將小長條均勻的拍好,然後開始交叉的編;

13表面上刷上全蛋液,放入預熱好的烤箱190度15分鐘後轉170度20分鐘;
