低筋麵粉: 15g,蛋奶液, 無鹽黃油: 25g,蛋奶液, 菠菜: 適量,蛋奶液, 玉米澱粉: 50g,麵糊, 白砂糖: 2g,麵糊, 食鹽: 2g,蛋奶液, 牛奶: 200g,蛋奶液, 蛋黃: 適量,麵糊, 全蛋: 40g,蛋奶液, 粗磨黑胡椒: 適量,蛋奶液, 胡蘿蔔: 適量,蛋奶液
步驟
1在攪拌盆里放入低筋麵粉,玉米澱粉,白砂糖和食鹽,用刮板混合,加入牛奶繼續混合

2然後加入蛋黃與1混合

3將切碎的黃油用手與面搓成小粒

4使材料相互混合

5將面搓成團狀時,用保鮮膜包起,放在冰箱冷藏1小時

61小時後取出麵糰,放在模具整形,薄厚在3mm左右,底部麵皮用叉子刺上多孔排出空氣

7將錫紙鋪在餅皮上,放入紅豆到模具7分滿的位置,放入預熱烤箱160°烘烤約10分鐘,把錫紙和紅豆移開,再烤10分鐘左右

8菠菜用鹽水焯過後濾干水水分,切成5cm的長段備用,胡蘿蔔切成小丁用油煸炒一下備用

9鍋中加入牛奶,加熱到80°C 後關火,再加入無鹽黃油,使其混合溶化

10將低筋粉,食鹽混合,再加入蛋液混合,與9攪拌再混合,過濾

11撒上粗磨黑胡椒
