24用温度计测量,其中心温度应该是65度,不要高过70度(主厨说温度超过70,蛋白质就煮过头了,鸡肝冻会变得又灰又厚,还呈现颗粒状)

25取出鸡肝冻凉至室温,再放入冰箱
