雞蛋: 4個, 酸奶: 160克, 低筋麵粉: 50克, 玉米澱粉: 25克, 細砂糖: 70克
步驟
1準備好所有要用的材料,蛋清蛋黃分離

2酸奶倒入盆里,低粉和玉米澱粉混合過篩到酸奶中

3用刮刀翻拌或切拌至無乾粉就可以了

4先加兩個蛋黃到酸奶麵糊拌均勻

5再加剩下兩個繼續拌均勻

6拌好的麵糊過篩一下更細膩些(不過篩也行,反正我過了),放邊備用

7蛋清加幾滴檸檬汁或白醋(反正我兩樣都沒加,因為白醋瓶的蓋子我指甲翻了那個痛),打發至魚眼泡

8分三次加入細砂糖用高中低速打發至提起蛋頭蛋白成雞尾狀,倒扣盆子無滑動

9插個小貼士:打發蛋白儘量把每個角落都打到或者打發塗中用另一把刮刀將圍邊的蛋白翻到中間打發

10蛋黃糊分兩次倒入蛋白霜中拌至完全融合

11再倒入剩下的蛋黃糊繼續拌均勻,烤箱180度預熱

12拌好的麵糊狀態是很細膩的,一段時間內是不會消泡的

13將麵糊倒入模具中,(因為原來是做古早蛋糕的,所以放了紙殼板,結果家裡沒有玉米油了)

14輕震模具兩下震出氣泡,麵糊不平就用刮板抹平(我是用筷子來回劃平的)

15將模具放入另一個大烤盤上,烤盤裡注入涼水兩碗(水浴法),放烤箱倒數第二層上火160度下火170度烘烤60分鐘

16如果烤的過程中水烤乾了,不用再加水!最後幾分鐘觀察表面上色,不滿意可調高溫度至上色滿意

17出爐後震兩下震出熱氣,這蛋糕無需倒扣的(有幾個小孔是我怕不熟用牙籤戳的)

18將待蛋糕冷卻後即可切塊享用了
