步驟
1將蛋黃和蛋清分別打入兩個乾淨無油無水的不鏽鋼盆中

2蛋黃中加入20克細砂糖,蛋清中加30克細砂糖

3將蛋清用高速打發至乾性發泡,也就是打蛋器頭可見直立不垂落的直尖角

4蛋黃糖先用電動打蛋器攪拌均勻,接著加入玉米油和牛奶拌勻,最後篩入麵粉,用電動打蛋器低速轉勻即成蛋黃麵糊

5將三分之一的蛋白霜混入蛋黃糊中拌勻,再將剩下的蛋白霜全部倒入翻拌均勻

6將混合好的麵糊倒入模具中,輕震幾下震出汽泡
