三個要點記心間 老土豆變成新土豆 1.三次沖洗:切好的土豆絲不止是泡在水裡就能去除澱粉,而且要反覆沖洗3次。 2.焯水火候:焯水不是把土豆絲隨便放入開水鍋里,十秒鐘必須趕快往外撈。 3.爆炒火候:土豆絲入鍋後,20秒鐘是最佳火候,必須關火盛出。
