小技巧
關於豆皮與油豆腐:對於福袋的材料,其實油豆腐絕對是首選,一方面蒸煮不會讓油豆腐變色,另一方面肉餡的汁可以更好的被福袋吸收。豆皮豆香味更濃,但蒸煮過後的豆皮顏色會變深,切記不可蒸太久。 收口:包子收口的手藝很重要,感覺一到需要收口的步驟,真的都離不開它。綁收口的韭菜要選擇嫩一點,不要太老的,不然很容易就折斷了。
