原料
麵粉: 250g, 溫水: 150g, 牛肉: 300g, 洋蔥: 150g, 精鹽: 1.5鹽勺, 味精: 1.5鹽勺, 十三香: 1鹽勺, 耗油: 2滴, 醬油: 1.5匙, 黃豆醬: 1匙(少許), 香油: 3滴, 油: 適量(多放些), 薑末: 適量, 雞蛋: 1個, 花椒水: 適量
步驟
1準備材料~

2麵粉倒入盆中加入清水攪成絮狀,揉成麵糰,蓋上保鮮膜醒面20分鐘以上~

3肉餡剁好裝入盆中,倒入剁碎的洋蔥,加入精鹽,味精,十三香,耗油,生抽,黃豆醬,雞蛋,薑末,香油,油腌制20分鐘以上(可兌些花椒水,分3次倒入餡料中,每一次倒花椒水攪拌至肉餡吸收,在倒入下一次)~

4案板撒些乾麵粉,拿出一部分麵糰,擀成大餅狀~

5將餡料塗抹在餅皮的¾處,肉餡厚些放~

6在這個位置切一刀(如圖)~

7把沒放肉餡的餅皮部分,往上疊,蓋上面的肉餡上~

10把開口的邊緣捏合上~

13電餅鐺內刷適量油,放入大餅(用鍋烙的,全程小火)~
