芹菜: 若干根, 烤鸭: 半只, 馄饨皮: 60张, 鸡蛋: 1个, 盐: 若干克
步骤
1从菜场买了一只烤鸭,留了半只做馄饨;

2将芹菜去根、择叶、洗净;

3将芹菜切成3-5mm小段;

4将芹菜丁放入开水中焯至八分熟,看到颜色变深即可,芹菜变软即可;(也可在生芹菜中加盐腌制,让芹菜出水)

5将焯完水的芹菜挤去水分,将烤鸭去骨切丁备用;

6将挤干的芹菜、烤鸭丁、鸡蛋倒在一起,加入适量的盐,搅拌均匀,考虑到烤鸭本身已有咸味,所以盐比日常做馄饨少放一些;

7包馄饨;

8馄饨开水下锅,煮沸后加入少量凉水再次煮沸,重复三次,馄饨就差不多熟了。芹菜的清香加上烤鸭的香气,人间极品!
