中筋面粉: 220g, 温水: 100g, 酵母: 3g, 糖: 10g, 精盐: 1g
步骤
1准备材料~

2将糖,酵母,温水(和手温差不多)调成酵母水,搅匀静置一会~

3酵母水一点点倒入面粉盆中,搅成絮状~

4在加入精盐(均匀的撒开)~

5揉成光滑有韧劲的面团(在案板上大致揉10分钟)~

6盖上保鲜膜放温暖处发酵至2倍大,大概1个多小时(冬天的阳台光线最好)~

7用手指沾面粉或沾水戳一下面团,不回缩不塌陷就发好啦~

8拿出面团再一次揉面,排气最关键步骤(有耐心的揉吧,能听见面团里的气泡噼啪的被挤出,尽量将空气排出,做好的馒头才没有大洞大眼的)~

9揉一会用刀切开,里面还有少许气泡~

10继续揉,直至没有气孔就揉好啦(大概揉了10分钟)~

11把面团揉成长条状~

12用锋利的刀切成均匀的小段(快刀会使切面好看)~

13蒸锅倒好水,把切好的馒头摆在铺有屉布的蒸屉上(没有屉布的在蒸屉上抹些油)距离分开些,用手整整形,把馒头往中间笼笼这样蒸好的馒头外形好看,盖上盖子,进行2次发酵~

14发酵至2倍大时(20分钟),开蒸~

15冷水上锅,大火烧开,转中火蒸10分钟(时间根据馒头大小而定,稍大些多蒸2分钟),蒸好焖5分钟在打开锅盖,水蒸气不要滴在馒头上了~
