主料: , 茄子: 1個, 尖椒: 1個, 五花肉: 平時炒菜用量, 香菜: 適量, 調料: , 蔥: 平時炒菜量, 姜: 2片, 蒜: 6瓣, 大料: 一個, 料酒: 1勺, 紅燒醬油: 3勺, 糖: 5克, 鹽: 5克, 啤酒: 300ml
步驟
1茄子洗凈切丁,加入3克左右鹽,用手抓勻,殺殺湯

2豬肉切丁備用

3尖椒切丁,香菜切段,備用(我加了一點杭椒,可加可不加)

4將醬油,糖,蒜末混合調一個碗汁

5材料準備好後,燒鍋熱鍋涼油,調到中火,放入大料,煸出香味。大料掰成小瓣,更容易出香味

6然後倒入豬肉塊,這是由於油溫很高,容易油花四濺,不過還是要翻炒小心粘鍋

7帶豬肉表面變色,沿鍋邊烹入料酒

8放入蔥姜,蔥姜切大一些容易挑出,(不過不嫌棄蔥姜的同學可以切沫,味道更濃郁)

9倒入紅燒醬油,不用很多給肉加一點顏色

10蔥煸出香味,就可以夾出來了

11茄子攥一攥水分,倒入鍋里,翻炒
