1材料:鰻魚1條,蔥,姜,料酒,鹽,油,蒸魚豉油,小紅椒

2將小蔥白洗凈切成長條,蔥綠切成碎末備用

3生薑去皮切成粗條,另切一些細細的薑絲

4將小紅椒切成薄的斜刀片備用

5將殺好的鰻魚用白醋搓洗,去掉魚身上的粘液,順便把魚內里洗乾淨

6將鰻魚背鰭朝上,按住後在鰻魚背上切好花刀,刀距間隔大概2厘米左右,深度大概是魚身的一半

8將蔥姜墊在盤底,再用一些蔥姜塞入魚腹內,放入深盤,上面也放一些蔥姜

9倒入兩瓶蓋料酒,半勺鹽抹勻腌制10分鐘後將鰻魚取出,換乾淨的盤子將鰻魚放好

10鍋中水燒開,放入鰻魚蒸10分鐘左右,取出,倒出盤子裡的汁水

11然後在魚身上撒上蔥花和小紅椒片,澆上蒸魚豉油
