1牛裡脊肉切塊,去掉筋膜,多洗幾次,去掉血水

2冷水上鍋焯一下,倒掉帶血沫的水

3冷水加蔥,姜和牛肉一起煮,煮爛一些,普通鍋兩小時左右,高壓鍋半小時就可以

4煮熟的牛肉拿出來,用擀麵杖擀一下

5平底鍋加熱,不放油,把擀爛的牛肉放鍋里小火炒

6炒之前再用手撕一下,或是邊炒邊用鏟子碾成小塊

7炒到牛肉變黃,七八分干,不要特別干,要不肉鬆會比較硬
