1將鱖魚去鱗,鰓,去內臟,洗凈

2各種配料洗凈備用

3按住魚身,將魚頭切下

4按住魚身,用快刀貼緊魚刺把魚肉片開,注意到魚尾處不要片下(不要斷),翻過來繼續,然後把帶刺的去掉

5切下來的魚片皮朝下,用刀斜切,要使魚肉成菱形(注意不用把皮切開,也不要過淺)

6用料酒,加入精鹽攪拌均勻,抹在魚肉及魚頭上

7滾上干澱粉,用手拎著魚尾抖掉多餘的澱粉

8將八分熟的油淋至魚肉上使其定型

9將兩片魚肉翹起魚尾,放進油鍋燒炸使其成型,在將魚肉整個放進油鍋,炸至金黃撈起,放入盤中

10魚頭入鍋炸至金黃,記得用筷子按住魚頭下巴部位,使其展開定型

11拼盤,根據圖來,將頭和尾翹起

12將番茄醬放入碗中,加鮮湯,糖,酒,醋,六月鮮和濕澱粉調汁

13鍋內流少許油,將蔥段放入煸香撈出加入蒜瓣末,筍丁,香菇丁,豌豆,蝦仁炒熟,淋上調味汁,燒開,淋上麻油

14起鍋澆至魚身即可
