1胡蘿蔔洗凈、去皮、切塊,入高壓鍋煮3分鐘,連湯用攪拌機打成糊汁備用

2韭菜洗凈切小段備用

3麵粉加雞蛋、倒入胡蘿蔔汁和成麵糰,放一旁醒面.

4先將雞蛋打散,鍋里倒入豬油(雞蛋與油的比例4:1)文火7成熱時加入蛋液,勻速翻炒,直至蛋液凝固,出鍋入大盆,鍋中倒入少量油,7成熱時加入蝦干,炒出香味即可,出鍋直接倒在炒好的蛋里,加鹽、白糖、胡椒粉、味極鮮醬油攪拌均勻.在倒入切好的韭菜繼續攪拌均勻.

5把醒好的麵糰擀成餃子皮,包成餃子.

6調麵糊:麵粉與水的比例1:20

7生煎水餃:平底鍋加熱,加適量油,再把餃子依次放在鍋中,倒入麵糊汁、糊汁淹沒餃子1/3、蓋上鍋蓋,煮至麵糊變鍋巴,倒出多餘的油,整體翻面蓋在盤裡.

8蘸料:香醋兩勺、一勺蒜泥,在加一點本店自製油潑辣子.完美!
