簡介
刀削麵之妙妙在刀功:用特製的弧形削刀削出的面葉,中厚邊薄。棱鋒分明,形似柳葉(刀法不同能削出扁形或三棱形麵條),滑利爽口,柔中帶硬,相當筋道!再配以各種葷素澆頭、打滷,吸溜兒~~一碗,好吃的不得了!
原料
豬後臀肉, 胡蘿蔔, 黑木耳, 麵粉, 大蔥, 生薑, 干辣椒, 八角, 鹽, 醬油, 料酒, 白糖, 黃豆醬, 涼水
步驟
1豬肉切成小丁

2鍋里不倒油,直接將切好的肉片放進鍋子裡小火煸炒,同時丟蔥段和薑片、干辣椒皮、八角什麼的同炒

3將肉裡面的油慢慢煸出來,煸至肉色微微金黃

8倒入開水,一定要開水哦!至少是溫水,不能用涼水,本來肉是熱的,經涼水一激,肉質容易變柴

9大火煮開,蓋上鍋蓋,轉中小火燜上5、6分鐘

17將麵糰反覆揉製成圓柱形麵糰
