魚: 1條, 酸菜: 1條, 干紅辣椒: 5、6個, 泡椒: 5、6個, 花椒: 適量, 蒜: 1頭, 姜: 適量, 料酒: 2勺, 澱粉: 適量, 油: 適量, 白砂糖: 適量, 鹽: 適量, 蔥: 適量, 香菜: 適量
步驟
1準備食材 魚骨肉分離,魚肉切片(斜著切最好),魚肉、魚頭、魚骨用鹽腌制15分鐘,姜蒜切片,酸菜、干紅椒切段,泡椒用牙籤戳破表皮(避免受熱過程中爆炸)

12魚湯倒入酸菜中,放適量鹽、糖(我不吃味精所以用糖代替)

13把魚片攤開一片一片放進酸菜魚湯里(速度要快,不然放早的魚片老了)全部魚片放好後嘗嘗湯的味道,自己調整鹹淡,魚片變色後就可以出鍋了~

14盛出後在表面撒上姜、一半蒜、干紅椒
