小技巧
1、魚頭和魚骨要煎至一下,再和酸菜一起燒制,這樣湯汁會更純美。 2、魚片要加蛋清拌均勻,這樣煮出的魚片才會更白嫩細滑。 3、魚片易碎,所以將魚片放入湯中時要小心一些,用筷子輕輕撥散,不要用力翻炒,魚片煮變色即可,不可煮久了,不然口感不好。
