1藕去皮洗凈,用清水浸泡

8調成麵糊。麵糊不能太干,太乾了,藕夾會裹得很厚。太稀了,藕夾上掛不住。

11切好的藕放一邊備用

19炸到微黃,盛出

20復炸。第二遍炸,用大火,將藕夾炸成金黃色,瀝干油,盛出,酥脆的藕夾就做好了。吃的時候,可以蘸些醋,解膩。

小技巧
1.藕夾的酥脆,關鍵材料是麵糊里加啤酒。恰巧家裡沒啤酒了,就用雞蛋代替了。 2.藕用清水浸泡,可以洗去多餘的澱粉,又可以讓藕變得更脆。切藕的時候,藕合儘量片得薄,這個很考驗刀工。 3.酥炸的技巧:炸兩遍。第一遍低溫炸熟,第二遍高溫炸酥上色。
