中筋麵粉: 165克, 梘水: 4克, 花生油: 50克, 轉化糖漿: 115克, 鹹蛋黃: 20個, 紅豆沙: 550克左右, 蛋黃: 1個, 吉士粉: 4克(可不加)
步驟
1首先製作冰皮,準備好所需材料

2將轉化糖漿、花生油、梘水、吉士粉混合

7鹹蛋黃放入烤盤,刷高度白酒,180度烤5-6分鐘去腥

8皮和餡料的比例是3:7,50克月餅的餡料應該是35克,所以蛋黃+紅豆沙=35克就行

9然後用紅豆沙包住蛋黃

11餅皮鬆弛好以後分成15克一個

12取一個餅皮用大拇指把中間部分壓扁

13加入一份餡料,用虎口一點一點把餅皮慢慢推上去收口

16壓好後放入烤箱200度烤5分鐘定型

17然後拿出來,表面刷少許蛋黃液(蛋黃加一點水稀釋一下,薄薄的在月餅上刷一層,一定要少量,不要貪心),繼續用180度烤13-15分鐘,月餅周圍有鼓起來的感覺表面上色就表示烤好了

18剛烤出來的月餅是軟的,放一下就定型了
