原料
中筋面粉: 200克, 开水: 100克, 盐: 适量, 葱花: 随意, 食用油: 适量, 鸡蛋: 2-3个
步骤
1首先把水烧开

2然后用筷子或者刮刀一边和面一边加入滚水,搅拌至棉絮的状态后,再用手揉搓成团

3揉得时候有点烫,要注意哦⚠️......揉至三光状态(手光,面光,盆光)

4把面团分割成三等份,静置5分钟

5然后用擀面杖擀成长形或者椭圆形,刷上一层薄薄的油,撒上葱花和盐

6卷起来

7稍微搓几下,搓成长条,不用搓?️很细长,搓几下只是为了收口更贴服

8然后把面团长条打圈的方式卷成图片的样子

9再用擀面杖擀开,擀薄

10把适量的食用油倒入锅中加热一下,然后把面饼放进锅中煎煮,拿出一个生鸡蛋打开后用碗装着蛋液,用筷子搅拌,把一半的蛋液倒在面饼面上,用勺羹的背面在饼面上轻轻涂抹开

11中小火煎2-3分钟后把面饼反过来,把剩下的蛋液再加到饼面上用勺羹抹平抹均匀……煎1-2分钟后再反过来煎30秒即可上碟啦!!

12煎煮的时候要注意火候和面饼的上色度,一般我用中小火,煎至两面金黄色即可。
