3郫县豆瓣酱切细碎,大蒜拍散切片,姜切碎末,干辣椒擦干净剪开,麻辣椒洗净切成小三角块

4取一干燥盘子,倒入少许干淀粉,将带鱼段两面裹上一层干淀粉,并抖去多余的淀粉

7锅内留少量底油,稍热,放入郫县豆瓣酱,翻炒至出现红油
