原料
面:: , 中粉: 300g, 白糖(助發酵): 3-5g, 水: 180g左右, 酵母: 3g, 醬:: , 麻醬: 120g(多點少點沒關係), 花椒: 3g左右, 鹽: 5g, 花生油: 10g, 餅皮糊:: , 水: 10g, 醬油: 2g, 麵粉: 8g
步驟
1水放微波爐加熱三四十秒至手溫,加入酵母溶解三四分鐘!

2麵粉放容器里加糖拌勻,一邊加水一邊攪拌成面絮,揉成麵糰,餳五分鐘,用搓揉法揉至光滑細膩有勁(或成面絮後放麵包機揉面一個程序十五分鐘)!餳面30分鐘左右!

3餳面的功夫,做醬:花椒放入鍋里小火炒至黑褐色,放案板上用擀麵杖壓成細粉!

4碗里放入麻醬,加入花椒粉、鹽,花生油放鍋里加熱,趁熱倒入麻醬里調勻!

5餅皮糊:水倒入碗里,加醬油、麵粉拌勻!

6案板上撒薄薄的面撲(麵皮多大撒多大面積),餳好的面取出後,不用揉,直接擀成長方形(薄點)!

7用勺子抹上醬(收尾的那邊空著點,抹的太滿,卷的時候會擀過去弄到外邊)!(抹好醬後,可以在上面撒一點點麵粉)

8將麵皮捲起!(一邊抻一邊卷)

13按扁成圓形!

14刷上餅皮糊,容器里倒入白芝麻(黑芝麻視覺上會受不了),將刷有餅皮糊的一面粘上芝麻,蓋上保鮮膜(保鮮膜上邊我會再蓋上一塊干籠布),餳5~10分鐘!

15不粘鍋里抹一層油(一點點就好),將餅胚放入,帶芝麻的面朝下,小火烙兩分鐘,將不帶芝麻的面抹一點點油,翻面也烙兩分鐘左右!上色!

16用不粘鍋烙的時候,將烤箱預熱,上火180度,下火185度,在鍋里烙好後,將餅擺到烤盤上,烤10分鐘就好了!(中間我翻面調整了一下)
