步骤
1去除内脏的黄鳝,洗净后沥干,剪成约5厘米长的小块;

2姜、蒜,切成末,干辣椒切成小段,待用;

3鳝块表面撒些许生粉,抹匀; 放入蒸肉米粉、姜末、盐、胡椒粉和料酒,抓匀,腌制约15分钟;

4将腌制好的黄鳝放入蒸笼中,用大火蒸约8分钟;

5热锅起猪油,油要烧烫一些,放入鳝块,炸至表面微黄后捞出;

6鳝块稍微冷却后,再回锅炸一次,放花椒、干辣椒,捞出沥油,盛盘;
