小技巧
1.胡萝卜不焯水其实也可以,就是稍微多煸炒一会; 2.下山药后不要过多搅拌,因为山药比较脆,很容易断,而且山药遇热会分泌大量粘液,炒的时间越长,容易糊,所以用一点鸡汤就会把山药划散开来; 3.焯过水的芥兰要最后下,翻炒几下即可,否则就不脆了。
