步骤
1苦瓜洗干净,切好,用少量盐腌十来分钟,然后把盐洗掉,凉干苦瓜备用

2把鲩鱼腩洗干净,晾干,无需腌制,正反面煎至金黄色,煎到表面金黄色即可,鱼身不必煎熟,备用。注意煎完正面可先把火关了待锅内温度降下来再反转鱼腩煎。

3可用精制过的豆豉,或者原颗阳江豆豉,备用。

4切适量蒜姜备用

5放油,放蒜姜,加适量豆豉开锅爆

6把苦瓜放进锅中炒几炒,放少量盐,糖,水

7把鱼放进苦瓜中焖5分钟左右,此处可放少量叉烧汁或者蚝油,注意火候小心干水。焖过程中可把鱼反转一次帮助入味。用筷子戳鱼,不沾筷子证明鱼已经熟。试味,上碟。
