步骤
1排骨洗净控干水分;(之前冷水浸泡一小时,换3次水)

2锅中下稍多油,5成热时下排骨,中小火煎至两面金黄;油盛出;

3炒糖色:锅中留少许油,放入冰糖,小火炒出大泡,转小泡后出现糖色;

4下排骨,两面都裹上糖色,盛出;

5锅中加少许油,油热后放入八角和桂皮爆香,放葱姜蒜炒香后转小火,加腐乳和腐乳块、生抽、料酒、豆瓣酱汁,炒出酱色,放入排骨,炒上色后加热水没过排骨;

6煮开后转小火炖1小时,大火收汁;
