原料
中筋面粉: 200g, 水: 100ml, 酵母: 2g(夏)3g(冬), 白糖: 10g, 猪油: 一小块, 剁椒(葱花): 适量
步骤
1 碗中倒入50g温水,加入糖,搅拌融化,再加入酵母,静置5分钟(这个步骤也是检验一下酵母的活性);

2 取50g水慢慢倒入称好的面粉中,再倒入酵化好的酵母水,用筷子搅拌成面絮;

3 加入小块猪油,揉成光滑的面团;

4 蒸锅中倒入热水,放上蒸架,将揉好的面团盖上保鲜膜放在上面(盆不要接触到水),盖上盖发酵,这样温度,湿度都有了,(用微波炉,烤箱也是可以的);

5 等待发酵的过程,可以先将剁椒炒一下,(锅烧热,倒入少许油,放入适量剁椒,小火煸炒几分钟就可以了);

6 面团发酵至两倍大,(手指沾少许面粉,在面团上按一个洞,面团不回缩,不弹起就表示发好了);

7 发好的面团,内部呈蜂窝状;

8 将发好的面团取出,用任何你喜欢的方式将里面的气孔排出去,再次揉成光滑的面团;

9 用擀面杖从面团中间按压往两边擀,擀成长方形的面片,不宜太薄;

10 用勺子将剁椒均匀的涂抹在面片上;

11 从上往下慢慢卷,稍微卷紧一点;

12 切成差不多大小的剂子;

13 两小块摞在一起,用筷子轻轻按压一下;

14 两手捏着两端,轻轻拉长一点,再往相反的方向拧两圈,(像拧毛巾的方式一样);

15 锅中倒入足量的水,屉布淋湿再稍许拧干铺在蒸格上,将花卷依次摆好;开火将蒸锅加热30秒左右(这里指的是室温较低时)微微的热帮助第二次醒发,20分钟左右;

16 醒好后就可以开火蒸了,水开后记时,10分钟,蒸好后焖几分钟再取出。
