黄油: 100克, 巧克力: 100克, 低筋面粉: 70克, 可可粉: 6克, 泡打粉: 2克, 鸡蛋: 两个, 白糖: 55克, 蛋黄: 两个, 牛奶: 150克, 黄油: 60克, 香草糖: 40克, 低筋面粉: 15克
步骤
1巧克力切碎,加入黄油,放入容器中

2低粉加可可粉,泡打粉放在筛子里(最好过筛两遍)

4黄油和巧克力隔温水融化(水温不要过高,大概五十度)

13蛋黄两个,加入白糖放入容器中

14用打蛋器将蛋黄打发至白(注意观察蛋黄的颜色对比)

21再重新回到炉上,小火煮至润滑(注意面糊滴落的状态)

22隔冰水放凉至三十度(这个就是卡士达酱,放冰箱冷藏即可。不过因为我们要加入打发的奶油,所以冷却到三十度就可以了)

23黄油软化后打发

小技巧
1、巧克力小蛋糕的做法很象布朗尼,只是装入了小纸杯中哈。 2、奶油酱是打发的奶油加入卡士达酱制作而成。滋味浓厚相当好吃。
