鸡蛋: 4个, 牛奶: 70克, 植物油: 30克, 细砂糖A: 30克, 低筋面粉: 80克, 细砂糖B: 50克, 白醋: 5克, 盐: 1克, 奶油: 150克, 鲜果: 适量
步骤
1水、植物油、白糖30克一起在盆里搅拌至糖化,筛入低筋面粉,搅拌均匀;

4蛋清中加入食盐、柠檬汁,分两次把白糖(B)加入蛋清中打发至中性发泡;

5蛋白和蛋黄糊分两次翻拌均匀;

6将蛋糕糊倒入铺有烤纸的烤盘上,用刮板或刮刀抹平;

小技巧
1、装鸡蛋的容器和打蛋器一定要无油无水,避免打不发; 2、蛋清搅打至湿性发泡即可,避免打老,影响口感; 3、蛋糕出炉马上撕掉烘焙纸并切割蛋糕; 4、打沙拉酱时,倒油一定要慢,避免过快出现油水分离;
