昨晚的晚餐还是投老郭所好,我包了韭菜鲜肉馅的饺子,我以前说过,我婆婆的拿手好戏一为炸酱面,还有一个便是韭菜鲜肉馅的饺子,我们一家三口都百吃不厌!跟婆婆学过多次不得其精髓,突然想起前阵子洋洋参加KET考试前我问他:“你胸有成竹了吧?”他回:“还行吧,有半根!”于是,借用过来吧,我这饺子得一半我婆婆的精髓吧!
原料
饺子粉 600克, 盐 少许, 清水 适量, 猪肉末 400克, 韭菜 100克, 虾皮 20克, 虾仁 100克, 鸡蛋 2个, 姜 适量, 盐 适量, 酱油 适量, 料酒 适量, 鸡精 适量, 糖 适量, 香油 适量
步骤
1将少许盐(加盐是为了让饺皮更加筋道)加入面粉,拌匀,缓缓倒入清水,一边倒一边用筷子顺一个方向将面拌成大雪花状

2再揉成面团,盖上湿布醒发(这会儿开始和馅)

3将醒发好的面团分别擀成长条、切成剂

6包入适量的馅

7先将两头的饺皮于中间捏合后

8再于两边分别打褶,成形

9大锅内做水,水开后下入饺子,盖上盖煮至开锅,激入凉水,再盖上盖,如此反复三次,开盖再略一会儿,即可捞出装盘

10取炒锅,倒入油,三成热时放入虾皮,中火将其煸至酥脆,取出,切碎

11在肉末中加入姜末、盐、酱油、料酒、鸡精、糖,分次加入少量的水,顺一个方向用筷子搅拌至黏稠
