大米: 1000克, 羊排: 500克, 羊肉: 500克, 胡蘿蔔: 8-10根, 洋蔥: 3-4個, 孜然粒: 適量, 葡萄乾: 適量, 油: 適量, 鹽: 適量, 花椒粒: 適量, 生薑: 4片
步驟
1羊排、羊蠍或羊肉都行,焯去血水、血沫,用溫水清洗乾淨,備用

2胡蘿蔔切條,不能太細

4熱鍋起油,炸香花椒後撈出。如果用胡麻油則忽略此步驟

5煸炒洋蔥,至軟爛金黃,然後放入羊肉、薑片繼續煸炒

6煸炒至羊肉變色,放入開水,沒過羊肉,水量一次加足,大火燒開後轉中小火燉煮

7將大米洗凈後用開水泡15-30分鐘

8羊肉煮至七成熟,放入胡蘿蔔,加鹽

9肉再燉煮5-10分鐘,下入大米,大火煮沸蓋蓋,轉小火燜20分鐘左右關火,千萬別揭蓋,再燜10分鐘
