低筋麵粉: 60g, 黃油: 40g, 鹽: 1g, 水: 75g, 雞蛋: 3個, 淡奶油(餡料): 150g, 糖粉(餡料): 15g
步驟
1將麵粉和紅曲粉過篩備用,雞蛋打散備用,黃油、鹽、水放入鍋中煮開

2煮沸後立刻離火,並倒入麵粉先用手動打蛋器攪拌均勻,然後用刮刀翻拌至看不見乾粉,這時麵粉已經熟化

3加入一半蛋液,用刮刀將麵糊切成小塊進行翻拌

4經過不停地翻拌後蛋液被麵糰吸收,呈較順滑的糊狀

5這時提起刮刀麵糊呈較干狀態,繼續加少量液

6直至麵糊順滑提起刮刀呈倒三狀態。注意看喲,雞蛋沒有全部加喲,剩下的蛋液就不能再加了!!

7烤箱預熱200°C。 把麵糊裝在裱花袋中,擠在烤盤上,勺子沾水用勺背將小尖角抹平

8入烤箱中層上下火200°C20分鐘,然後轉180°C20分鐘,烤好後不要立即拿出來,繼續留5分鐘後出爐

9泡芙冷卻後將淡奶油加糖粉進行打發至硬性可以裱花狀態備用
