帶皮豬肉排: , 橄欖油: , 小茴香: , 豆蔻: , 迷迭香: , 月桂葉: , 洋蔥: , 紅辣椒: , 大蒜: , 青花椒籽: , 白葡萄酒: , 鹽: , 雞精:
步驟
1豬排洗凈,擦去表面水分, 豬皮切菱形花刀; 然後肉的那一面抹上小茴香、迷迭香、鹽,按摩均勻(皮的那一面不需要) 保鮮膜包好入冰箱冷藏腌制2小時以上:

2將洋蔥切小塊,大蒜帶皮壓扁, 青花椒籽、紅辣椒備用;

3豆蔻、小茴香、月桂葉、迷迭香備好;

4不粘鍋入橄欖油,燒至6成熱, 將帶皮那面放入煎制;

5保持中小火,不能急,每一面煎1分鐘,先正反面,然後再側面,煎制表皮出現金黃的焦糖色;

6將煎至焦糖色的豬排取出, 放在鋪了油紙的砧板上;

7再在豬排上鋪一張油紙, 然後把煎鍋壓在豬排上面; PS:這樣做是可以用煎鍋的餘溫把豬排里的血水逼出來,還能起到將豬排壓平整的效果,不至於捲曲難看~

8待煎鍋餘溫散去,拿走鍋, 這時血水已經排出,鮮度都鎖在豬排里;

9煎鍋內再加一點橄欖油,放入洋蔥、大蒜紅辣椒爆香;

10再倒入香料碟,炒香;

11倒入白葡萄酒;

12大火煮開鹽、雞精調味後即可關火;

13烤箱預熱200度 豬排放入烤盤,倒入煮好的湯汁;

14入烤箱,180度,上層,10-15分鐘, 根據肉排的大小而定;
