步驟
1紫茄子去把兒,洗乾淨,切成約一指半寬窄的長條,放鹽少許拌勻(鹽別放多了哦!),腌漬十幾分鐘後,擠出水分倒掉;

2姜蒜切末,泡椒切碎,香蔥切花,紅甜椒和大青椒切小丁,用料酒、醋、生抽、白糖和澱粉加適量清水調成味汁(醋和白糖的比例根據個人口味調配,建議白糖多一點點,只是多---一---點---點!);

3熱油(少放點,茄子很吃油,只需要炸的時間稍長一點就能達到好效果),倒入茄條過油,炸軟後,壓出茄條里多餘的油,撈出;

4底油適量,下姜蒜、蔥白丁炒香;

6下茄條翻炒;

7烹入味汁,炒至茄條入味後,放入甜椒青青椒丁和大部分蔥花,炒勻;
