金像高粉: 25g,麵糰, 美玫低粉: 214g,菠蘿皮, 黃油: 38g,麵糰, 室溫軟化黃油: 56g,菠蘿皮, 酵母: 4g,酵種, 水: 45ml(俺用了35ml),麵糰, 蛋液: 50g,酵種, 糖: 112g,菠蘿皮, 鹽: 3g,麵糰, 奶粉: 5g,麵糰, 蛋: 60g,菠蘿皮, 香草精: 適量,菠蘿皮, 檸檬皮: 適量,菠蘿皮, 蛋液或白糖: 適量,裝飾
步驟
1室溫軟化的黃油+糖攪勻

13發酵好後,取出麵糰分割成40g的麵糰滾圓,蓋上保鮮膜中間發酵15—20分鐘

14取一團分割好的菠蘿皮麵糰、壓面,用擀麵杖擀成比麵糰大點的圓形

15取一中間發酵好的麵糰,收口朝上、放在擀好的菠蘿皮(9)上

16利用手掌把菠蘿皮推至麵糰底部(如圖10)
