原料
土雞半隻, , 青紅椒, 栗子, 藕, 香菇, 蔥, , , 老抽, 生抽, 豆瓣醬, 蒜, 姜
步驟
1 雞肉沖洗乾淨;雞肉切塊,把雞皮切掉備用;

2 鍋里放水煮開放入雞肉,再次煮開就可關火,拿出雞肉用涼水沖洗;

3 雞皮放入鍋里開中火後轉小火,把裡面的雞油熬出來;

4 把雞皮渣從鍋里拿出;放入蔥姜蒜煸炒出香味;

5 加入雞塊翻炒,加入兩勺豆瓣醬翻炒;加入適量料酒,生抽和老抽翻炒後把雞塊倒入一個陶瓷鍋里;

6 加水完全沒過雞肉蓋上鍋蓋大火煮開後轉小火燉20分鐘;

7 20分鐘後加入栗子繼續燉20分鐘;

8 藕去皮切片,青紅椒也切片;

9 先放入藕,開大火,讓汁水溢上來給其上色;
