原料
大蔥 1根, 梭子蟹 2隻, 干澱粉, 蒜片, 薑片, 料酒, 椒鹽粉
步驟
1將梭子蟹清洗乾淨,去腮去肚臍去內臟(可請賣螃蟹的幫忙處理好)

2用剪刀將蟹剪成四小塊

3切口處沾上干澱粉,將蟹大鉗子用刀背拍碎,方便成熟與入味

4油鍋燒至8成熱,下入蟹塊炸1分鐘

小技巧
1、在挑螃蟹時,要選擇活的,蟹腳齊全的; 2、蟹塊下油鍋炸之前需要控干水分,不然容易炸鍋; 3、不要在油中炸太久,不然蟹肉容易老; 4、不宜多吃。特殊人群慎食。
