鮮鱸魚 一條, 甜酒釀 一小碗(醪糟), 豬油, 蔥絲, 薑絲, 青紅椒(可選), 香椿苗(可選,主要是為了點綴好看些,可以換做蔥絲或者香菜), 鹽, 料酒, 白鬍椒粉, 味極鮮醬油, 食用油

1鮮鱸魚一條

2先颳去魚鱗。(動作要領:從魚的尾部向魚頭方向刮。)

3再用剪子或鋒利的小刀從魚腹處剖開

10蔥白切絲、老薑也切細絲,碼在魚身上

11水燒開後,將魚身豎起來擺在盤子中,連盤入鍋(因為鍋不夠大,所以換了盤子),同時將酒釀倒在魚身上

12大火,先蒸3分鐘

13揭開鍋蓋,淋入味極鮮醬油一勺

16利用這個時間,另取一個鍋,倒入適量食用油,將油燒熱,魚盤端出來後,青紅椒切成小圈,碼在魚身上,然後用熱油潑之
