小技巧
1.今天把雞胸肉切成青豆大小的雞丁,切的小也是把雞丁變嫩的辦法,雞丁很快吸收蛋清和生粉,有里到外都很嫩; 2.雞丁切好後放一點點鹽,加入半勺生粉水和半勺蛋清,這兩樣必不可少,一定要加,雞胸肉才會嫩,但是量都不要太多,攪拌後不見多餘的水分,說明剛好; 3.一定要把雞丁抓勻,讓生粉水和蛋清完全被其吸收,最好再放置15分鐘,這樣雞丁會更軟嫩; 4.給雞丁過油是關鍵,但切忌油溫高了變成油炸雞丁了,這裡油溫大概50度都不到,你先可以放一粒雞丁試一下,如果沸騰起來說明油溫已經太高了,馬上關火,讓油溫降下來再放雞丁,一般鍋里加油後大火15秒後就差不多可以關火,再放入雞丁,劃散,雞丁有點變白就要拿出; 5.大家發現今天我是在青豆煮的差不多時把調料都先放好了,那是因為雞丁只要幾秒鐘翻炒就可以,如果放了雞丁再放調料那雞丁又會變老,所以這個步驟也非常關鍵; 6.今天的調料都是放一點點,特別是鹽,魚露,都是鹹的,可不要放多了,又加了白鬍椒粉和一點白糖,都是給菜增香的。
