小技巧
整個過程要大火翻炒,雞胗口感才好; 雞胗有先腌入味,另外榨菜是鹹的,最後加少許鹽就好; 調料還可以加郫縣豆瓣醬,與姜蒜同時爆香,辣味更足;但郫縣豆瓣醬是鹹的,最好別再加鹽調味了;
