餃子皮: 50個, 蘿蔔: 340g, 肉餡: 250g, 蔥: 1根, 姜: 4片, 精鹽: 1鹽勺+2鹽勺, 雞精: 2鹽勺, 十三香: 1鹽勺, 生抽: 3匙, 香油: 4滴, 植物油: 適量

2蔥姜洗凈切末裝盤備用~

3肉餡倒入盆中,放入蔥薑末,加入精鹽雞精,十三香,生抽,香油,植物油,朝一個方向順時針攪拌均勻腌制20分鐘以上~

4將蘿蔔去皮洗凈用擦絲板擦好絲裝盆~ 倒入1鹽勺精鹽(去辣氣出水)~ 用手揉搓捏蘿蔔絲~ 一會就揉出蘿蔔水了~

5將揉出的蘿蔔水倒掉,清洗蘿蔔絲倒入清水泡至10分鐘~

6用手攥緊蘿蔔絲,擠凈蘿蔔水放案板上,剁切成小碎末,將切好的蘿蔔碎末倒進肉餡盆中~

7攪拌均勻備用~

10蒸餃: 將餃子有距離的擺在鋪有屜布的蒸鍋中~ 蓋上蒸鍋鍋蓋~ 大火燒開轉中火蒸15–20分鐘(餃子包的大就蒸20分鐘)~ 蒸好拿出裝盤~

12煮餃: 鍋內倒適量清水,待水開放入餃子~ 不時用勺子推動推動,以免粘鍋~ 中間澆兩次涼水餃子漂浮起來就煮好了~ 撈出控水,裝盤~
