野生黃鱔: 3條, 姜: 5克, 蒜: 5克, 蔥: 10克, 干辣椒: 5克, 胡椒粉: 2克, 蒸肉米粉: 20克, 黃酒: 3毫升, 醋: 7毫升, 生抽: 10毫升, 豬油: 200克, 花椒: 5克, 高湯: 15毫升, 生粉: 適量, 芝麻: 糖
步驟
1去除內臟的黃鱔,洗凈後瀝干,剪成約5厘米長的小塊;

2姜、蒜,切成末,干辣椒切成小段,待用;

3鱔塊表面撒些許生粉,抹勻; 放入蒸肉米粉、薑末、鹽、胡椒粉和料酒,抓勻,腌制約15分鐘;

4將腌制好的黃鱔放入蒸籠中,用大火蒸約8分鐘;

5熱鍋起豬油,油要燒燙一些,放入鱔塊,炸至表面微黃後撈出;

6鱔塊稍微冷卻後,再回鍋炸一次,放花椒、干辣椒,撈出瀝油,盛盤;

7調製醬汁,混合生抽、糖、醋、薑末、蒜泥、生粉,再加些高湯,攪拌均勻;
