步驟
1仔土鴨搓洗乾淨,剁成小塊,焯水,瀝干水分,備用;

2蒜切片,大蔥斜切,二荊條和小米辣斜切,仔姜切片,準備好冰糖;

3熱油(不要太多,因為鴨塊會出油),放入蒜片和部分蔥片爆香;

4倒入鴨塊,中小火慢炒,炒至鴨肉變色,鴨皮出油;

5烹入適量料酒,鏟勻;

6調入豆瓣醬翻炒後,烹入生抽增鮮,少許老抽上色,放入適量冰糖調味;

7摻適量清水沒過鴨塊,中小火燜制30分鐘左右;
