2首先你要準備好新鮮的處理好的豬肚一隻;

3因為豬肚屬於臟器,會有一定的腥臊味,需要用大量的麵粉或是粗鹽來洗凈表面,去除異味。麵粉和粗鹽會將表面的附著物伴隨著濕氣一併帶下,從而起到了清潔的作用,洗完後要將麵粉或粗鹽完全沖乾淨(如果嫌麻煩就買洗好的豬肚);

4將適量的白鬍椒粒填入豬肚當中,大量的胡椒會去起到去除豬肚異味和提供辣度的作用;

5切取數片薑片,一併放入豬肚中;

6準備一根青蔥,適當的在根部拍一拍,將香味逼出來,切成兩段一併放入豬肚中;

7用一根長竹籤將豬肚的口左右交替穿刺封起口來(注意不要扎到手哦);

8這一步是確保豬肚裡面的食料不會跑出來;

9準備一整鍋熱沸水,用於汆燙豬肚;

10在鍋中加入一根青蔥(切兩段),數片薑片;

13過程中翻面,保證汆燙過程中去除豬肚本身的異味;

14Tips:一定要使用沸水汆燙豬肚,能夠更快更好的去除異味;

15汆燙豬肚過程中,再準備一隻湯鍋,倒入半鍋沸水,用於煲豬肚湯,同時在湯鍋中加入大蒜粒、白鬍椒粒、料酒;

16鹽要等到湯煮好時再放用以調味;

17Tips:一定要注意汆燙豬肚的水一定不能用於煲湯,不然會將異味帶入湯中;

18所以這鍋水可以直接丟棄不用;

21同時也一定不要打開竹籤!

23蓋上湯鍋蓋,大火燒開鍋內的水後;

26如果時間不夠時,也可以直接使用高壓鍋或壓力煲燉煮1小時即可;
