雞蛋(全蛋): 200g, 無鹽黃油: 60g, 牛奶: 60ml, 低粉: 150, 細砂糖: 150
步驟
1黃油隔水融化,與牛奶混合均勻備用

2準備一鍋50度左右的水,將雞蛋和糖混合放在一個無水的盆里放在鍋中,隔水打發!蛋液逐漸變淺,大泡越來越少,蛋糊逐漸濃稠細膩!

3將蛋糊打發到畫個8不會馬上消失的狀態!

4將低粉篩入蛋糊中,用刮刀翻拌,直到充分混合!翻拌手法輕柔,避免消泡

5將混合好的麵糊取出三分之一與黃油牛奶攪拌均勻!再將其倒回麵糊盆中,翻拌均勻即可!倒入模具,在桌上鎮兩下,把內部大泡鎮出,烤箱預熱150度,中下層烤40分鐘!

6上色差不多的時候蓋上錫紙!將烤好的蛋糕拿出倒扣,待不燙手後脫模!
