原料
排骨適量, 花椒若干, 大料2-3個, 蔥姜蒜少許, 辣椒三個, 青椒半根
步驟
1 蔥姜蒜切末,香菜.辣椒切段,放邊備用.

2 排骨切成小塊備用

3 鍋內放涼水把排骨倒入,煮出血沫,肉質變白軟爛即可撈出備用,注:千萬不能用熱水焯排骨,那樣肉質會越焯越硬

4 每一塊小排骨,切兩個花刀,方便入味,煎也好煎

5 鍋內放油,把排骨放進去,烤至兩面金黃,即可撈出備用

6 鍋內留油,放入蔥姜蒜,花椒,辣椒,大料,茴香,進行編炒,炒出香味放入事先炸好的排骨進行編炒
7 倒入少許味極限,依個人口味放入椒鹽,臨出鍋放入味精,即可裝盤
